Greek Braised Chicken

Ingredients:

2 kg chicken, organic if possible
1/4 cup butter
1 onion, finely chopped
1 garlic clove, crushed
1 1/2 cups chopped tomatoes
1 tablespoon tomato paste
1/2 cup dry white wine
1 bay leaf
2 pieces cinnamon bark
1/2 teaspoon sugar













Directions:

1. Cut chicken into serving pieces and wipe dry.
2. Melt the butter in a heavy saucepan and brown chicken on all sides. remove when browned.
3. Reduce heat and add onion and garlic, fry gently until transparent, add remaining ingredients. Cover and simmer for 20 minutes.
4. Return chicken to the pan, cover and simmer gently for 45 minutes or until tender.
5. Remove bay leaf and cinnamon bark and serve.
